¾ lb whole trout, scaled and cleaned
¼ bulb fennel, sliced
½ brown onion, sliced
3 tbsp chopped parsley
3 tbsp chopped dill
2 tbsp olive oil
1 lemon, sliced
Salt and black pepper to taste

In a bowl, add the onion, parsley, dill, fennel, and garlic. Mix and drizzle the olive oil over it.

Preheat the Air Fryer to 350°F.

Open the cavity of the fish and fill with the fennel mixture. Wrap the fish thoroughly in parchment paper and then in foil. Place the fish in the fryer basket and cook for 10 minutes.

Remove the paper and foil and top with lemon slices. Serve with a side of cooked mushrooms.
