3 medium zucchinis
1 cup pork rinds, crushed
2 eggs, beaten
1 cup grated Parmesan cheese
Salt and black pepper to taste
1 tsp smoked paprika

With a mandolin cutter, slice the zucchinis thinly. Use paper towels to press out excess liquid.

In a bowl, add the pork rinds, salt, pepper, cheese, and paprika. Mix well and set aside. Place a wire rack or tray. Set aside.

Now, dip each zucchini slice in egg and then in the cheese mix while pressing to coat them well in cheese. Place them on the wire rack.

Spray the coated slices with cooking spray. Open the Air Fryer, place the slices in the fryer basket in a single layer without overlapping.

Close the Air Fryer and cook them at 350°F for 8 minutes for each batch. Once ready, remove them onto a serving platter and sprinkle with salt.
